The newest ingredient launched by Limagrain Ingredients is Innosense White Masa, used to produce soft tortilla, wraps and salty snacks like tortilla chips or tacos from a white maize.
Masa flours are precooked maize flours traditionally produced by a process called nixtamalization, requiring high amounts of water and alkaline conditions that generate a high amount of waste. More than that, in the drying step, a high amount of energy is required to evaporate large amounts of water used for cooking.
Limagrain, however, has developed a process that uses much less water, does not generate polluted water and requires less energy for drying (less water to evaporate compared to a traditional process).
This process is applied to all its masa flours in the range, and, thanks to European sourcing and the company’s eco-friendly process, its new white masa is a functional ingredient with better environmental impact.
Additionally, Limagrain Ingredients has the option to adapt the concept depending on a customer’s applications: either for a use in tortilla chips as snacks; as a soft tortilla; or a gluten-free alternative to wraps currently based on wheat. With its light colour and Tex-Mex taste, it’s way easier to integrate inclusions to the product: pulses, seeds, legumes ... everything is possible and will bring a touch of originality and more consumer attention.
