Bellevue rolls out functional durum wheat range for every application
According to the French durum wheat processor, the Gem Plus range is the answer to the many challenges that manufacturers face, such as volume, softness, freshness, annealing after freezing and machinability, to name just a few.
The flours are easy to use and are guaranteed to produce consistent quality, allowing industrial processes to be optimised but still adhering to a clean label approach.
Durum wheat flour is known for its unique taste and bright golden colour. It is also packed with fibre and protein, and had increased hydration meaning a better yield, less stickiness and fewer defects on the lines.
The range includes Gem Plus Soft, which brings softness and freshness to soft breads like milk bread and brioches; Gem Plus Volume for added volume for baguettes, ciabatta and croissants; Gem Plus Rheol for easy-to-work doughs, like laminated baguettes and chapati; and Gem Plus Bake-Off, specifically developed for frozen doughs.
