Dawn’s Fonds are naturally flavoured cram stability powders for fresh or non-dairy creams, that bakers and chefs can use to stabilise, gelatinise, flavour and sweat cream for nearly all recipes, including mousses, bavarois, desserts and cream toppings and fillings.
The new range is available in three flavours – Fruity, Sweet and Chocolate. Presented in powdered form, they mix easily in water and whipped dairy or plant-based creams along with the chosen flavour base such as compounds, fruit purees and liquids.
The Fonds ensure excellent solidification and cut-ability of a product made from traditional gelatine, commonly derived from collagen taken from animal body parts, making the finished product suitable for flexitarians and even vegans.
The gelatine-free Fonds are also freeze and thaw stable.
