From fermented foods to meatless meals, New York-based Comax Flavors highlights four hot trends likely to influence food and beverage development in 2019.

“Instant access to information and an affinity for travel” is driving demand for “multicultural flavor innovation,” says Comax Flavors, which says consumers are showing growing interest in plant-based foods, and foods and beverages containing probiotics. Here are four trends it is watching in 2019:

1 - Drink to your health:  Intriguing new flavor combinations from avocado daiquiri, and blackberry lilac tea cooler, to harvest spritzer, could feature in refreshing new beverages in 2019, says Comax, which says flavored water, tea and mocktails are growing in popularity (Gen Z drinks less alcohol than any generation): “Beverage choices with less sugar, lower calories, more natural ingredients and functional benefits are trending.”

2 - Meatless meals: Vegetarianism, veganism, rawism, flexitarianism and Paleo diets are on the rise, claims Comax, which has developed a ‘meatless meals’ flavor collection with options including Asian Stir Fry, Spicy Fried Chicken, and Street Taco flavors.

3 - A passage to India: Younger consumers seek authentic global flavors in their backyard, says Comax, which has developed a range of flavors including Indian vegetable curry, mango lassi, and masala spiced donut, inspired by growing interest in Indian cuisine.

“Over the last few years, we’ve seen Indian ingredients such as cardamom, coriander, curry, and garam masala emerge. Comax thinks Indian Food is ripe for the American palate and has created the A Passage to India collection.”

4 - Steeped in culture: Consumers are seeking more ‘high-impact’ fermented and pickled flavors, says Comax, which has developed a new collection including five spice kombucha, pickled beet & onion, and pickled peach.
