The bakery, patisserie and chocolate ingredients specialist has specifically developed Tegral Brioche, Tegral Cornbread and O-tentic Tutto Pugliese in response to the increased demand for global foods with provenance.
Julia Darvill, sales director for Puratos UK, told BakeryandSnacks the company took into account key consumer trends while formulating the baking mixes, such as using honest ingredients to give the most authentic consumer experience.
The art of bread
“We believe bread is just as much about theater as it is taste and texture,” she said, noting that around 51% of UK consumers expect a more globalized offer, while European consumers also expect more diverse foods.
“Brioche products have seen exponential growth in mainstream bakery and there is a strong American influence coming through. In addition, consumers are willing to pay more for a premium bread,” she said.
The mixes were formulated to enable craft bakers to personalize the breads to easily create several on-trend varieties.
The new bread mixes
Puratos Tegral Brioche is an easy-to-use mix to create the authentic brioche that’s a hit in France, but also synonymous with the American burger bun and hot dog roll. The bread is lower in fat than traditional brioche thanks to the use of Puraslim – a recently released range of bread mixes and improvers from Puratos that essentially reduces the fat content of soft and sweet breads – although the use of Sapore natural sourdoughs retains the buttery taste.
Puratos Tegral Cornbread is an American-style cornbread, slightly adapted for the UK consumer who prefers a more ‘bread-like’ result. It preserves the sweetness of cornbread, and has added corn grains for added texture.
“While there is a clear move towards a more diverse and globalised food offering, UK consumers like new concepts and flavors to be introduced gradually,” explained Darvill.
O-tentic Tutto Pugliese has a strong tradition rooted in Altamura in southern Italy. It is a simple mix made exclusively from a fine version of the hard wheat semolina, obtained by mixing the varieties of wheat cultivated on the highlands of Apulia and Basilicata. The mix offers a unique combination of certified flour and sourdough.
“The aim [of the mixes] is to highlight the provenance to encourage millennials to try something different,” said Darvill.
“We love the stories associated with these breads, some of which go back many hundreds of years,” added Puratos UK MD Julian Lewis.
“It is our role is to help bakers of all sizes to recreate these amazing breads [and thereby] grow their businesses by enhancing their offerings.”
Both the Tegral Brioche and Tegral Cornbread mixes are available in 15kg bags, while the O-tentic Tutto Pugliese mix is available in a 10kg bag.

The products were specifically developed for the UK so are only available on that market, however, large quantities can be obtained through Puratos’ global teams.
