Philibert Savours created mini panettone cakes with dates for the MENA market at Gulfood Manufacturing last week.

The company had a live kitchen demo area with Frederic Buffard, master baker at Philibert Savours, showing how it can customize its products towards the tastes of people living in the region. 

Six French firms unite

This year, the firm partnered with five French firms; You, Guyon, Merand dough processing lines, Mae trays and Hengel deep-freezing and storage, to showcase their services on one exhibition stand. 

Pascal Philibert, CEO, Philibert Savours, told BakeryandSnacks, MENA is the future and it wants to see if there is room in the market for crusty bread, like a baguette. 

This is a new type of bread for Dubai because they like to eat sweet, soft bread. We want to adapt our production to the local habits. The younger generation want to try new experiences and this is one for them,” he said. 

We have changed the recipe for panettone to produce small bite size sweets with dates in them. By doing this, we can try to enter the market with something new.” 

Strawberry and orange gluten-free muffins

As well as bread, master baker Buffard demonstrated orange, strawberry and plain gluten-free muffins for guests. 

We have a small kitchen on the stand to demonstrate the types of products we can produce in partnership with other French manufacturers who make ovens or silicon trays," he explained. 

Many people want to produce bakery products but they don’t have the technological know-how or capabilities to produce it here. This is the first time five companies have come together to illustrate what they can do within the bakery industry.” 

Gulfood Manufacturing 2016 was held at Dubai World Trade Centre from November 7-9.
