Collagen peptides can be used in a variety of dietary supplements and food products where protein is required, Gelita demonstrated at the recent IFT show in Chicago.
“Collagen peptides is a neutral-tasting, natural-odored fine white powder that lends itself very well to diverse applications," said Gelita marketing director Lara Niemann.
Overcome protein formulation-related issues
Collagen peptides can help food manufacturers overcome some of the challenges of protein formulation, including odor and sensory issues, she added. The company also says collagen is suitable for 'clean-label' applications.
"It’s highly soluble and dispersible, and virtually allergen-free. It could be used in muffins, breads and snacking items, such as protein bars and cereal bars.”
Gelita plans to promote its collagen ingredients through a number of scientific studies it has been involved in this year, Niemann told ConfectioneryNews.
The study results have shown health benefits of collagen to human skin, nails and joints, added Niemann, who said the human body contains collagen already, and that supplementing a diet with what the body already has can be beneficial.
Gelita is also a major supplier of odorless gelling agent gelatin, which is derived from collagen. Gelatin is primarily used in confectionery - to give mouthfeel and enable flavor release, according to Gelita - or as an emulsifier or stablizer in dairy applications.
In addition to providing protein ingredients to the food and drinks industry, Gelita is active in the pharmaceutical sector.
