Corbion Caravan claimed that ADA, a widely used food additive in dough production, had been a growing concern among consumers despite having a GRAS (Generally Recognised as Safe) status of the US Food and Drug Administration.
The company claimed their dough conditioner shortened fermentation and mixing times, lowered friction, allowed better temperature control and could be used in a variety of breads.
“Im-Prove 200 No ADA allows dough to develop faster without ADA and increases the dough strength,” said Ricardo Moreira, category manager at Corbion Caravan.
