New glazing range shines up sweets

German confectionery group Alfred L Wolff has developed a new range of glazing agents, building on its existing line of ingredients designed for sweet manufacturers.

The Quick Glanz range is a variety of surface glazes suitable for both hard and soft panned products.

A uniform surface glaze is important in the manufacture of dragees - sweets coated with a hard sugar shell - in order to protect the product and improve the presentation.

According to the company, the glazing agents "correspond to the individual product characteristics, the different production parameters and technical equipments used by the confectionery manufacturers."

Quick Glanz C is a glazing wax for hard dragees, it is derived from pure carnauba wax spray powder and contains no additives.

Glanz H was formulated as a polishing dispersion for pan-coated candies made with or without sugar. It contains natural and refined waxes mixed in food alcohol.

A polishing agent for soft, coated sweets such as jelly beans is also available in the form of Glanz L which is made from carnauba wax in vegetable oil.

The final variety in the Alfred Wolff range is Glanz M - a glazing wax mix in powder form.

The new line will be on display at the confectionery trade fair, Pro Sweets, held in Cologne, Germany, 29 January -1 February next year.

It forms part of the existing Quick Products range and ingredients line including honey, gum and licorice.

The company said: Each Quick product has a specific function, either for gumming, glazing/polishing, sealing, anti-sticking, souring of various candy types or to provide texture to gelatine-free chewy confectioneries."
