A new alternative to the traditional egg wash for bakery products has hit the market with ICI subsidiary National Starch & Chemical launching Versa-Sheen glazing agent.
Launching the product this week the company said that the "versatile glazing agent, Versa-Sheen can be applied pre- as well as post-bake." According to National Starch the cholesterol-free agent is freeze/thaw stable making it suitable for pre-baked frozen pastry and bake-off applications. In addition, claims the company, the controlled and homogenous browning properties reduce the risk of over-burn.
Available in a free-flowing carbohydrate-based product which dissolves easily in water, Versa-Sheen also has a low viscosity at high solids concentrations.
